I grew up in a castle on the West coast of Ireland, right on the edge of the Wild Atlantic. With my father as the head chef and my mother the pastry chef, the kitchen was the heart of our world. Of all the scents that filled that space, my favorite was always my mother’s Dilisk and black pepper bread. The saltiness brought me to the sea, while the warmth offered a deep, grounding comfort.
I found that same rare sense of connection at our local seaweed bathhouse. Submerged in hot water and local seaweed, It nourished my body, mind and soul. I always left feeling more connected to myself and the sea.
When I moved to Plymouth, I realized this ancient ritual was missing. I wanted to find a way to bring that same warmth and coastal connection into the comforts of your own home.

Dilisk is a journey back to ourselves, rooted in the ancient connection between the wild ocean and the simple comforts of our home.
This journey led me to Toby at BLUGREENS. Our passions aligned the moment we spoke; he harvests seaweed with an inland approach, farming in harmony with our local harbors to ensure the ocean is respected and sustained.
